Vegan Gluten-free Biscuits

 

Post retirement, I wake up every morning looking forward to having a good cup of tea with biscuits while catching up with news, emails etc.  I got so addictive to biscuits, decided to replace store bought biscuits with home-made whole grain version for guilt free consumption.  This is my first attempt, turned out ok.  Let me know if you improved them further :).

Almond & Oat Flour Biscuits

Ingredients

Use non-GMO organic ingredients as much as possible.

Wet Ingredients:
1.5 cups of Oat Flour (Gluten-free)
1/2 cup of Almond Flour
1/2 teaspoon (tsp) Baking powder
1/4 tsp Salt

Dry Ingredients:
1/4 cup Almond Butter
1/4 cup Unsweetened Apple Sauce
1/4 cup Maple Syrup
1 tsp Vanilla Extract

Flax Egg:
1 Tbsp Flax Meal 
2.5 Tbsps of Water

Method

1. Make Flax Egg:  Add 2.5 Tablespoons of water to 1 Tbsp of Flax meal, mix well and keep it aside for 10minutes. 
2. Preheat oven to 325F.  Line cookie sheet with parchment paper.
3. Combine all wet ingredients in a large mixing bowl, add Flax egg and mix well until smooth. 
4. Add  all dry ingredients, mix well until it forms into cookie dough.  If it is too dry, sprinkle few drops of plant based milk to form thick cookie dough.  Don't over Knead.
5. Cover and refrigerate for 15-20 minutes.
6. Place cookie dough between two sheets of parchment paper and roll into 1/4" thickness, cut into squares or rectangle shape or use cookie cutter to your desired shape. Prick using fork, place them on cookie sheet with adequate spacing. These are egg-less, won't expand or spread much.  
7. Bake 12-15min until golden brown.  Take out and cool on a wire rack.  They will become nice and crunchy.  Do not leave them in the oven. Store them in airtight container.  Lasts several weeks.

Yield: Approx 24 biscuits.

Variations

Be creative, try with different seeds, nuts, dried fruits, and spices.

Optional ingredients:

1/4 tsp Cardamom or Cinnamon or Nutmeg powder
2 Tbsp  chopped Walnuts or Sunflower or Pumpkin seeds
3 Tbsp chopped Dates or Raisins or other dried fruits 

Swap Chia egg if flax meal is unavailable.
Swap maple syrup with date syrup.  Date vs maple syrup considered as added sugar.

Key Nutritional Highlights
